This year long course is designed to build on the skills and knowledge that the learner has already achieved on the level 2 technical course. Assessment will be carried out throughout the year and will be carried out by a series of ongoing skills tests in the kitchen for each unit of study, aligned with short answer questions and assignments. There will be two end of section practical tests called synoptics. One will be on pastry and the other on kitchen and larder. There will be two days a week practical work and this will include the opportunity to practice "real live cooking" in the College restaurant kitchen on a Thursday evening.
Included within this course will be ample opportunity for the learner to engage in competition work and other enrichment activities.
